Artisan cheese made from pure goat's milk, subjected to a pasteurization process, small, pressed paste, matured in a controlled environment, beige rind with a pleated and shiny mark, without varnish no preservatives. It maintains a white and uniform cut with small eyes, slightly flexible texture, intense flavor of complex shades, very balanced and complete in the mouth with ample back tastes that remain long, very slightly spicy. The cheese is hand-packed one at a time, vacuum-packed to maintain all its aroma and organoleptic qualities and wrapped in food-grade paper. It is carefully packed, forming small folds on the side of the cheese and closing at the base, then a product identification label is attached which embraces the cheese and closes and seals the paper at the base. The label contains the organoleptic characteristics of the product as well as the nutritional values.
